Our Flor de Sal is formed during the evaporation process in the stages of Crystallization in the month of May when the sun is at it's highest point, the surface collects a thin layer of salt from 3pm to 7pm. The salt is collected with a sifter, with smooth and slow motions so that the small flakes do not sink.
