Ingredients
For the Pepper Steak:
- 1 lb chuck steak cut into medium slices
- 1 large onion sliced
- ½ green bell pepper sliced
- ½ red bell pepper sliced
- 3 tbsp low-sodium soy sauce
- 3 tbsp cooking oil
- 1 tbsp cornstarch
- 1 tbsp sugar
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ginger powder — or use fresh ginger
- 1 level tsp black pepper
- Fleur de Sel to taste for finishing
Instructions
1. Prepare the Steak
Slice the chuck steak into medium strips and place them in a bowl. Add the soy sauce, garlic powder, onion powder, ginger powder, black pepper, sugar and cornstarch. Toss everything together until the steak is evenly coated. Allow it to sit for a few minutes while you prepare the vegetables.
2. Prepare the Vegetables
Slice the onion, green bell pepper and red bell pepper into thin even strips. Keeping the vegetables slightly crisp will give the finished dish a better texture and add a fresh contrast to the tender steak.
3. Cook the Steak
Heat the oil in a large skillet or frying pan over medium-high heat. Add the seasoned steak in a single layer. Cook until browned and cooked through turning occasionally so the pieces develop a nice sear. If necessary cook the steak in batches to avoid overcrowding the pan.
4. Add the Vegetables
Once the steak is browned add the sliced onion and bell peppers to the pan. Cook for several minutes stirring occasionally until the vegetables are tender but still slightly crisp. Toss the vegetables with the steak so the flavors combine.
